If you are a Spinach and Lasagna lover, then this is your dream recipe!! Topped with marinara sauce, white sauce and Mozarella and baked to perfection, these roll ups are perfect to feed a crowd. Warning: Your kids won’t stop asking for more helpings 😀.
I have entirely converted to Lasagna roll ups nowadays, I hardly make the traditional layered Lasagna. My last visit to Bangalore to my sisters place I discovered these amazing Lasagna Noodles in a gourmet shop and these are a must in my parties now. Just play around with the ingredients of the fillings and the sauces and you are ready with your signature dish.
The ingredients used in this baked roll ups are always easily available in the pantry….in fact to tell you the truth I thrive on this vegetarian filling. Be it grilled sandwiches, wrap, cannelloni or Lasagna this yummy filling finds place in my kitchen very regularly. Sometimes I add corn or sautéed mushrooms to the cottage cheese and Spinach filling and it surely rocks……simple yet incredible flavours.
The homemade Marinara sauce is what I use for most of my pasta dishes. It’s a make ahead, freezable recipe which always comes handy when I need it. I always use a combo of Marinara and white sauce to bake the Lasagna roll ups as the white sauce imparts a lovely richness and creaminess to the dish. We start with spreading the Spinach and Cottage Cheese filling on the Lasagna noodle, layered with some grated mozzarella and fresh tomato slices, sprinkled with torn basil leaves, rolled up and topped with Marinara and White sauce, mozzarella and finally baked till the cheese turns golden and melts. So without further ado let’s just jump over to the recipe.
We can also use Ricotta Cheese or Cream Cheese instead of the cottage cheese in this heavenly Lasagna Roll ups bake .
