Tender Coconut & Chia seeds Lemonade
Here’s a recipe of refreshing and healthy lemonade with Tender Coconut Water,Chia Seeds and Honey…a fat free and low calorie drink!
Coconut water, Chia seeds, Lemon juice and Honey ..when they meet together in a drink ,it becomes the ultimate natural energy booster! It’s rejuvenating, hydrating and packed with nutrition. This is a great on the go drink as well as a great healthy option to serve as a mocktail for your health conscious guests and an easy way to incorporate Omega 3 fatty acids into your diet.
Chia seeds is a great food to help with weight loss, it helps us lose weight in a healthy way. These seeds are rich in protein, fibre and antioxidants .To get the maximum effect we must soak them in water a few hours before eating them. Add this super food to your breakfast, curries, desserts ,water and reap its benefits.
The delicate sweetness and the fresh taste of Coconut Water makes it a perfect thirst quencher on a hot sunny day. The nature’ s very own sweet nectar can do wonders for your skin, your waistline and your heart health. It contains minerals, vitamins and phytochemicals which are very beneficial for the human health. It’s known as the Nature’s sports drink and a life enhancer.
I have not used Sugar in the drink and the use of Honey makes it a weight watchers delight. Honey can also be substituted with Agave Nectar or Stevia.

Here's a recipe of refreshing and healthy lemonade with Tender Coconut Water,Chia Seeds and Honey...a fat free and low calorie drink!

- 2 Cups Tender Coconut Water
- 2 Tbsp lemon juice
- 2 Tbsp honey
- 2 Tsp Chia seeds
- A Handful Fresh Mint leaves For Garnish
- A Few Lemon slices For Garnish
- 5-6 Pieces Ice Cubes
- 1/2 Cup water To soak the Chia seeds
- Soak the Chia seeds in 1/2 Cup of water for 10 minutes then strain and keep aside.
- Add the lemon juice, honey and the soaked Chia seeds to the tender Coconut Water in a jug, mix well and chill in the fridge for 15- 20 minutes.
- Pour into individual glasses, garnish with fresh mint leaves and lemon wedges, add few ice cubes and serve chilled.

A delightfully different way to serve coconut water. Here in Mombasa, because of the heat we usually serve fresh juices or coconut water to guests instead of tea. My next serving of coconut water will have chia seeds floating in them 😉
