Cheesy Veggies & Sausage Enchilada
Tortillas filled with sausage ,beans and veggie filling, smothered with a fiery red enchilada sauce, sprinkled with cheese and cilantro and baked to perfection.

  1. For the filling, heat oil in a pan, add onion and saute till translucent.
  2. Add the rest of the veggies and boiled kidney Beans saute for 2 minutes till partially cooked.
  3. Add the seasonings and mix and finally add the chopped sausages and fry for 1/2 a minute and keep aside.
  4. For the enchilada sauce, heat the olive oil in a saucepan add garlic and onion, fry till onion starts sweating.
  5. Add the flour and fry for a minute and then add the stock gradually stirring vigorously so that there are no lumps and let it thicken a little.
  6. Finally add the seasonings and pureed tomatoes and boil on low flame for 10 minutes. Switch off the flame.
  7. For assembling the enchilada, lay out a tortilla, and spread two tablespoons of enchilada sauce over the surface of the tortilla. Add beans ,chicken and veggie mix in a line down the middle of the tortilla, then sprinkle with some grated cheese. Roll up tortilla and place in a greased baking dish. Repeat with the remaining ingredients. Then spread the remaining enchilada sauce on top of the tortillas, and sprinkle on the remaining shredded cheese and fresh cilantro.
  8. Bake in a preheated oven uncovered at 180 deg C for 20 minutes and till the cheese and sauce start bubbling .
  9. Remove from oven and serve immediately garnished with sour cream .
