Sift the flour, wheat flour and baking powder in a bowl and add rest of the dry ingredie to it. Make a well in the centre.
Now add the pumpkin purxe9e, milk, vinegar to the dry ingredients and mix well with a hand whisk. Don’t over mix, if the batter is too thick add a little milk.
Let the mix sit for 10 mins for the Chia seeds to work its magic.
Meanwhile heat a non stick frying pan and over medium low heat brush melted butter or oil and drop tablespoons of the batter into the pan.
Allow room for the Pikelets to spread, you can make 5-6 Pikelets on the pan together.
Cook the Pikelets till small bubbles appear on the surface and its golden brown underneath.
Turn them over and cook on the other side. Repeat the process with the remaining batter.
Serve hot with jam, maple syrup, honey or pancake syrup , with fruits or just as it is.
