  1. In a blender combine diced watermelon, coconut milk, lime juice and honey or sugar and blend till smooth.
  2. Pour the blended purée into a freezer proof dish, cover with cling wrap and freeze till nearly solid ( nearly 3 hours)
  3. Remove from freezer, cut the nearly frozen purée in small cubes, blend again in a food processor till the texture is silky smooth.Pour back into the freezer dish and freeze till firm for approximately 3 hours.
  4. Wait for 5 minutes for the frozen purée to soften a little before serving in scoops or in slush form.
Recipe Notes

Even with the coconut milk it freezes pretty hard, so it’s better to shift it to the fridge from the freezer 1 hour before to form easy slushy scoops.
