Strawberry rose cardamom lassi

 

 

As the tunes of balam pichkari wafted from the officers institute next door I felt bad for the nth time visualising how my friends must be enjoying Holi with music, dance,beer,biryani and Bhaang Thandai and on the contrary I was cooped up at home with the deadly viral which was in air.

With my hubby and kids out for playing Holi ,I was alone at home fighting my restlessness.Not used to sitting idle , I rummaged the refrigerator to see a box of strawberries and yoghurt peeking from the shelves.Thandai not being a hot favourite with my hubby and daughters I planned to whip up a lassi with yogurt ,strawberries ,rose syrup and a sprinkling of cardamom powder for them to chill themselves after their Holi session in the scorching sun.

 

The lassi turned out to be frothy and creamy with a little hint of cardamom, the strawberries imparting a little crunch in between sips and the rose syrup gave a nice pink colour and the right amount of sweetness. You can use Gulkand or rose petals jam to substitute the rose syrup. You can increase or decrease the quantity of rose syrup according to the sweetness you want.The gulkand in the lassi has the properties of soothing and cooling the system.

Instructions
  1. Put everything together except the garnishing ingredients in the jar of a mixer grinder and whip for 2 minutes.
  2. Serve in glasses with a strawberry as a garnish on the rim and a sprinkling of dried rose petals on the frothy,chilled lassi.
