So here I am back again after a one and a half month long hiatus. Though I missed my space and what I love doing the most this break was a much needed respite that I was craving for.
Last two months has been a roller coaster ride for me trying to juggle the home front, my voluntary work, kids exams, social commitments, a weight loss challenge and of course the blog. And I am happy I am back in the blogging arena again!
This time the Foodie Monday Bloghop theme being A Cook Book recipe, I decided to bake something from my favourite Donna Hay ‘ s book Modern Classics. Donna Hay is an Australian food stylist, author and a magazine editor.Watching her cookery shows on TLC with a refreshing cup of coffee is one of my favourite past times and helps me destress too.
This blog hop I zeroed down on a melt and mix white chocolate cake with a dark chocolate drizzle which was in my to bake list since long. And since the last one month I being on a diet refused to bake lest I lose control of my will power to gorge on the baked treats.
The white chocolate in it lends a lovely richness and decadence to the plain vanilla Bundts. It’s the kind of cake that requires just one bowl, no electric mixers required and can be made in minutes….just melt and mix!😀 Donna Hay’s Melt & Mix White chocolate mini Bundts is the answer to your cake making dilemmas! It’s the most deliciously moist cake… and you don’t even need a mixer!

Here is a recipe of Moist and decadent white chocolate mini bundts with
dark chocolate drizzle by Donna Hay,perfect dainty cakes for an afternoon tea party.

- 185 Gms butter Chopped
- 1 Cup milk
- 1 1/2 Cups castor sugar Or Ground Sugar
- 150 gm White Chocolate Chopped
- 2 Cups plain flour Sifted
- 1 1/2 Tsp baking powder
- 1 Tsp vanilla extract
- 2 eggs
- 150 Gm dark chocolate Chopped
- 1/2 Cup Single or Pouring Cream
- Preheat oven to 160C
- Place butter, milk, sugar and choc in saucepan over low heat and stir until melted and smooth.
- Place flour, baking powder, vanilla and eggs in a bowl. Add the chocolate mix and whisk until smooth.
- Pour the batter into individual mini Bundt pans or bundt trays and bake for 30-35 minutes or until cooked when tested with a skewer.
- For the glaze or drizzle add the chocolate and cream in a saucepan and keep stirring on low heat till melted and smooth.
- Let the glaze stand for 10 minutes and then drizzle on the cooled Bundts and serve.
If the glaze is not of a pouring consistency, add a little milk to it.

These mini bunts look gorgeous. Its a nice way to use up white chocolate which gets left in my fridge. I too have watched Donna Hay on telly and love her style of cooking. I think I should get one of her books.
