On the Go Cheesy Spinach and Corn Muffins with Olive oil
Ok ok…I admit I am suffering from the healthy eating syndrome at this juncture of my life and I swear I am enjoying it. Well for all my bakes I have always substituted oil for butter except for all the special occasions that I bake for. My aim is to switch to whole wheat Flour and other grains subsequently mainly to practice healthy eating and reap the health benefits.
This Monday our Foodie Monday team has prepared all bite size foods, basically any food that can be served in bite size portions or which can be savoured in a bite. I decided to go for savoury Muffins, perfect for an on the go breakfast or as a tea time snack with your hot cuppa of tea.
Healthy spinach with crunchy corn and bell peppers and packed with cheesy deliciousness that you can grab and go anytime.You can pop them into kids lunchboxes or make them eat as an after school snack too.The secret ingredient that takes the Muffins to a whole new level is the humble stock cube …it gives a burst of flavour to the the Muffins. And the best part is you just need a bowl and a hand held whisk to mix everything and pop it into the oven.

Savoury, Cheesy, Bite size fluffy Muffins perfect for tea time time snack or on the go breakfast.

- 1 Cup spinach Chopped
- 1/4 Cup sweet corn kernels
- 1/4 Cup red bell pepper , chopped
- 1 Cup cheddar cheese , Grated
- 250 gms all purpose flour
- 1 1/2 tsps baking powder
- 2 eggs
- 150 ml milk
- 1/3 Cup Olive oil Butter or 75 Gms ,melted
- 1 tsp vegetable stock seasoning
- to taste Salt Pepper and
- Preheat the oven to 180 deg C and line a 12 case muffin tin .
- Sieve the Flour with the baking powder and keep aside.
- Gently whisk the eggs in a bowl and add in the milk and melted butter.
- Add the cheese, Spinach, Corn and Bell pepper and mix.
- Add the Flour, seasoning cube, salt and pepper and mix just enough to combine all the ingredients.
- Divide the mixture between 12 muffin cases and bake in the preheated oven for 20 - 25 minutes or till a skewer stuck in the middle comes out dry.
Lovely recipe Saswati…. can I substitute corn with corn meal?
Thanks Rini ..yes you can use half corn meal and half Apf but you can’t substitute corn with cornmeal ..there’s no need to add corn if you don’t have it.

Hey, just wanted to clarify in the 3rd step , u hav mentioned that either milk or butter to be added after whisking eggs….or is it milk n butter ?
Another query….How do you prepare vegetable stock seasoning cubes at home?

Aradhana…sorry have edited the 3rd step..it’s milk and butter.As for veg stock cubes..you get them ready-made…here in India we get the maggi seasoning cubes.
