School holidays come and go in the blink of an eye. With the long summer holidays nearly coming to an end mothers start getting stressed out with school reopening and the extra responsibilities that come with it. First and foremost being how to wake the child up before school time and get them and their lunchboxes ready.For me that’s the most tedious task. And if you have two stubborn kids then God save you!!
I hate stepping into the kitchen the moment you are up for the day. All groggy eyed and half asleep you can hardly think of what to cook for their lunch boxes. The kids have two tiffin breaks in school and so I have to struggle with variety every single day. A main course like sandwiches, poha, dosa, pancakes, idli, parathas etc for one break and some fruits,dry fruits and some interesting snack like cookies, biscuits, cakes etc for the other. My younger one being a fussy eater looks forward to the snack part every day. And for the mom it’s a daily struggle to think of a healthy as well as tasty choice of snack.
Granola bars are one of them and my kids adore these nutty, crunchy, chewy bars. How much can you keep on buying these packaged processed stuff when you know how harmful they are in the long run. So I have started making them at home making it as healthy and nutritious as possible.
These bars have the super healthy Oats and Flax seed Meal, dried fruits, nuts, a little bit of semi sweet chocolate chips, peanut butter and honey to bind it. The ingredients in these bars resemble a trail mix but they are packed into the convenience of a bar. And it’s No Bake! Perfect for not only as a snack for lunch boxes but as a after school snack, for busy on the go days or you can pack along for your adventurous summer trips.

Home made no bake granola bars, packed full of wholesome ingredients like Oats, Flax seeds,Nuts and dried Fruit.The chocolate chips lure the kids to pick it up right away. A perfect snack for the school lunchbox, after school snack or to pack along for the random day trip during summers.

- 1/3 Cup Almonds whole
- 3 oz cashews
- 3/4 Cup oats
- 1/6 cup flaxseed , ground
- 1/4 cup chocolate chips, semisweet
- 1/6 cup cranberries , dried
- 1/6 cup raisins (not packed) , seedless
- 1/2 cup peanut butter
- 1/4 cup honey
- 1/4 teaspoon sea salt
- Line an 8x8 inch square pan with parchment paper. Keep extra in the edges to facilitate easy removal of the granola mix.
- Roughly chop Almonds and Cashews or pulse in the food processor.
- Mix Oats,ground flaxseed,raisins, cranberries,chocolate chips and the nuts together in a bowl.
- In a separate bowl microwave the peanut butter for a few seconds till it melts.
- Add the honey and salt and mix. Wait for it to cool before mixing with the dry ingredients so that the chocolate chips won't melt.
- Mix with peanut butter honey mix with the dry ingredients, mix with a spatula till well coated and mixed.
- Press the mixture into the parchment lined baking dish packing it tightly. Cover and refrigerate for atleast an hour.
- With the help of the extra parchment paper in the sides pull out the granola slab and cut into 8 pieces. Store in an airtight container for a week, can be stored for more than a week in the refrigerator .
