Pizza flavoured Idli Muffins
The overcast grey skies, the gusty winds, the incessant spells of rain lashing the window panes somehow all these just makes me depressed. I do enjoy when the monsoon hits and the rains give relief from the oppressive heat, the scent of the parched earth getting soaked in the first showers…a day or two of rain is fine with me. The endless days of torrential rain, flooded streets, thunder, lightning makes me depressed and SAD or which is better known as seasonal affective disorder.
The one good thing that rains do to me is to stir my inner chef fantasy and I love my kitchen during these times when my domain exudes warmth with the stove switched on the whole day. I draw the curtains, switch on the lamps to shut the rain and the gloomy weather out and draw solace in my warm, cosy kitchen with comfort food simmering on the stove.
And during one of those rainy evenings last week I made these hot, steaming pizza flavoured Idli muffins which got polished off within minutes. Pizza is a favourite in my household and my children adore anything with pizza flavours. So decided to improvise the drab Idli into muffins and added some chopped veggies, pizza sauce, seasoning, cheese and chilli flakes before steaming them. They turned out to be deliciously soft and cheesy with a prominent Pizza flavour and aroma. And these healthy, steamed, cheesy Idli Muffins go to the 47th Foodie Monday Bloghop where the theme is Monsoon Madness.

Delicious,healthy, steamed,cheesy Idli muffins flavoured with pizza seasoning and pizza sauce.Enjoy these rawa idli muffins paired with a hot cup of tea as a rainy evening snack or pack them in your kids lunchbox as a healthy option.

- 1 Cup Rawa rice semolina Idli or
- 1/2 Cup Urad Dal Black Gram or split and skinned
- 1 Cup veggies finely chopped ( coloured capsicums,jalapexf1os,olives,onions)
- 2 tbsps sweet corn boiled
- A handful cheddar cheese of grated or Mozarella
- 3 - 4 Tbsps pizza sauce ( I used Store bought)
- 1 teaspoon oregano pizza seasoning or
- 2 tsps chilli Flakes
- salt to taste
- Soak the Idli rawa and urad dal separately overnight or for 4-5 hours.
- Grind the urad dal to a smooth consistency,add the drained rawa to the dal batter and mix till incorporated.
- Ferment for 3-4 hours. Your Idli batter is ready.
- Add the chopped capsicums, onions, olives,jalapexf1os, corn, cheese, pizza sauce, seasoning, chilli flakes and salt to the batter and mix properly. Leave few chopped veggies for the garnish.
- Pour into small muffin moulds, sprinkle with some cut veggies, oregano and chilli flakes.
- Steam them in a pressure cooker without the weight for 10 minutes ,the first 5 minutes in high and the next 5 -6 minutes in low flame.Let them stay in the closed cooker for 2 minutes before unmoulding.
- Serve warm with some pizza sauce and enjoy.
Notes
- Alternatively the muffins can be steamed in a steamer for 12-15 minutes .
- Cheese is optional, if you want to make it low calorie and more healthy the cheese can be omitted.
- As for the veggies the quantity of choice of veggies can be lessened or increased according to your taste keeping the original quantity intact. I put more of capsicums and less of onions,jalapeƱos and olives equalling all to 1 cup as mentioned.
