Eggless Ragi / Finger Millet Chocolate Rosette Cookies
A easy, gluten free, eggless, sugarfree, crispy, 3 ingredient Chocolate cookies with Ragi or Finger millet in Rosette shapes.
Finger Millet or Ragi or Nachni or Mandua as it’s known in different parts of India qualifies as a superfood, a grain which is duly recognized for what it has to offer ecologically, gastronomically and nutritionally. Like all Millets Ragi is gluten free, high in calcium, high in milk protein perfect asย a substitute for lactose resistant people and low in glycemic index making it suitable for the diabetics. This hardy grain requires very little care to grow, can thrive even in drought conditions and is resistant to pests and diseases.
With more and more people becoming health conscious this super grain is gaining popularity due to its immense health as well as weight loss benefits. Roti, Porridge, Pancakes, Dosas, Idlis, Cakes, Cookies, snacks …Ragi can be used in so many different ways. With enough reasons to embrace Ragi lot of recipes have been developed with this versatile healthy grain as the main ingredient .
With the 108 th Foodie Monday Bloghop theme being Millet Recipes I thought of using Ragi or Finger Millet in some chocolate cookies to make it healthy as well as tasty. The best part is it’s eggless, gluten free, sugar free, fat free as well as baking powder or soda free too !!
The Chocolate in it imparts the desired sweetness and the fat is derived from the chocolate compound which is not pure chocolate but has added vegetableย fats. Pure Couverture Chocolate has cocoa butter in it while Chocolate Compound is made from Cocoa, vegetable fat and sweeteners.
This recipe is adapted from Kruthi Bipin‘s Cookie Recipe in Home Bakers Guild , a famous baking group on Facebook. This was in my to do list since the day I saw this super easy recipe in the food group.

A easy, gluten free, eggless, sugarfree,crispy, 3 ingredient Chocolate cookies with Ragi or Finger millet in Rosette shapes.

- 130 Gms Dark Chocolate Compound Chopped
- 130 Gms Milk Chocolate Compound Chopped
- 20 Gms cornflour
- 60 Gms Ragi or Finger Millet Flour
- 1/2 Tsp vanilla extract
- Mix both the chopped Chocolate in a bowl and melt on a double boiler . Alternately Melt the chocolate in a microwave for 30 seconds, stir and again melt for 30 seconds taking care not to burn it.
- Sieve the corn flour and Ragi flour together.
- Add the sieved flours and the vanilla extract to the melted chocolate and mix till incorporated well and is of a pipeable consistency.
- Place the batter in a disposable piping bag with Wilton 1M tip ( for rosettes) and pipe the cookies in a Rosette pattern on a greased and lined Cookie tray.
- Bake in a preheated oven at 160 deg C for 12- 15 minutes.
- Cool and store in an airtight container.
- If the batter is thick ,use more melted chocolate to make it to a pipeable consistency ,don't use milk or butter.
- Use only chocolate Compound and not pure chocolate for this recipe.
- Do not bake the cookies at a high temperature as they have a tendency to burn.
- If you are baking on a dark coloured cookie tray start eyeballing the cookies by 10 minutes.
- These cookies are delicate, let them cool completely so that they become crisp and then store them.
- If you don't have Rosette making tip,cut the mouth of the disposable piping bag and pipe out round cookies.

Thanks for sharing such delectable recipe. I dont have white chocolate compound handy. May I replace 130 gms of white chocolate compound with dark chocolate compound.. Thanks
If you are using 130 gms dark chocolate compound then the other half has to be milk chocolate or white chocolate compound to sweeten it otherwise it will be bitter in taste and it won’t have enough sugar to call it a cookie.

Is chocolate compound the same as cooking chocolate?
Hi Malini Compond as well as couverture both can be used for cooking or baking.Eating chocolate has milk solids and sweeteners which help in stabilising the chocolate and when melted result on separating making it difficult to bake or cook.

Hi, i tried making them today but they weren’t pipiable added apprx 100 gms mor choclate but still could not pipe them it was a too thick hust made them circle shaped. ๐
These looked really pretty…so tried making this….so sry to say tht it was a big disaster…just couldn’t pipe it…becomes one mass

Hi am so sorry to hear this, I have made these.cookies so many times but haven’t faced this issue. This recipe is inspired from one of the known bakers in HBG …so can’t really question the authenticity of the recipe.Hope you have used compound chocolate and not pure ones..Try melting in a double boiler as that’s the best way to melt chocolate.I use Morde chocolates.
