Sabudana Shakarkandi Gulaab Kheer/Sago Sweet Potato Rose Pudding
Navratri ….literally meaning nine nights in Sanskrit is one of the most important festivals of India and is celebrated twice a year with much fervour, joy and gaiety. This traditional festival is associated with Goddess Durga and the nine days fasting ritual has a lot of religious significance and beliefs attached to it. The festival symbolises the victory of good over evil, or positive over negative. There is a solid scientific reason behind the nine days of religious fasting . According to many it’s a way to get close to the almighty and some cultures believe that the fasting helps in spiritual purification and stronger will power.
Well religion and science do go hand in hand. Both the navratris fall during that time of the year when the seasons are changing and our body immunity is at a low and we are more susceptible to fall sick. Foods like alcohol, meat, grains, onion, garlic create negative energies and slow down the process of digestion. This explains the choice of food items that are easy on stomach during these nine days and make it to the table like buckwheat or kuttu, Amaranth, Sago or tapioca pearls, water caltrop or Singhada, Sweet potato or Shakarkandi, fruits, juices or light vegetables. These foods during this time meet the nutritional requirements of our body as well as are light on our digestion.
For the 61 st Foodie Monday Bloghop the theme being Navratri Recipes I made this traditional Kheer following the rules of the fast or Vrat. This delicious kheer is made with milk, sago pearls and sweet potatoes with little gulkand which gives a subtle rose flavour. Sago pearls are a good source of carbohydrates and provide energy to the body during the fasting period. Sweet potatoes are rich in antioxidants ,vitamins and minerals and are high in fibre making it a wonder root and perfect for fasting days. Enjoy this delectable Kheer which is delicious yet light on the stomach making the fasting Navratri days a feast for all !!

A delectable Kheer or Milk pudding which is delicious yet light on stomach making the Navratri fasts a feast for all !

- 1 milk l
- 1/3 Cup sago pearls
- 1 sweet potato medium size , grated
- 1 tsp ghee
- 4 - 5 Tbsps sugar
- 1 tbsp rose petal jam Gulkand or
- 1/2 tsp cardamom powder
- 1 tsp rose water
- 2 tbsps nuts Chopped ( Cashews, almonds, pistachios)
- Wash and soak the sago or Sabudana in enough water barely covering the Sabudana.
- Boil the milk in a heavy bottomed pan till it becomes half in quantity making sure to keep stirring in between.
- Meanwhile grate the sweet potato or shakarkand and fry in 1 tsp of ghee till its cooked.
- When the milk reduces to half its quantity add the soaked sago pearls to it, draining the water properly.
- Boil in low flame till the sago is cooked and translucent.
- Now add the sugar, Gulkand, cardamom powder and rose water and cook for 4-5minutes.
- Finally add the grated, fried sweet potato or shakarkand and cook for 3-4 minutes.
- Switch off and serve chilled garnished with nuts and rose petals.

As I am reading your post, I can smell the gulkand. I recently used it for the first time in a recipe and have fallen in love with it. Amazing share Saswati. Going to try adding sakarkhand next time to the sabudana kheer.
