Boondi Sev / Shev Ladoo
Ladoo with an unusual combo of salted Sev and sweet Boondi,complimenting each other beautifully,served in auspicious occasions in Odisha.
Today I am posting one of my favourite laddoos made from Boondi and Sev, a very unusual combo, sweet and salty and complimenting each other amazingly well. Back home in Odisha these Boondi Ladoos are served as Prasad during Ganesh Puja and Saraswati Puja. These ladoos are also called Sareikela (the name of a place in Odisha) ladoos. We as kids would flock to the decorated pandals just to have these divine tasting Prasad either in the form of laddoos or just a loose mix of both sev and Boondi generously heaped in our palms. Oh ! the pleasure of gorging on those, indescribable . Though my version lookwise is quite close to the original ones but lookwise it’s just bang on!!
Ganesh Chaturthi is known as Chovoth in Goa and unknown to many by far the most celebrated Hindu festival in Goa. Like Maharashtra it is celebrated from minimum 2 to 21 days here. The idols are immersed on the 5th, 7th, 11th and 21 St day here. The festive fervour is evident in the people in colourful clothes thronging to the traditional sweet shops, streets teeming with devotees checking out the Ganapati Dekhavas ( decorative scenes), the markets full of seasonal vegetables and fruits and the Patoli( the paraphernalia used to decorate the idol).
The occasion of Ganesh Chaturthi gives us an opportunity to remember what Lord Ganesha stands for. It might seem strange but every little peculiarity of Lord Ganesha has a spiritual significance as shown in this pic.

Compared to my native land Odisha the Ganapati festival here is celebrated in a much higher scale with even more grandeur and with lot of religious enthusiasm but my heart pines for the warmth and fragrance of my homeland. Images of my childhood celebrating the elephant God’ s festival with my near and dear ones conjure in my minds eye as I nostalgically type this post.

 An unusual combo of salted Sev and sweet Boondi,complimenting each other beautifully and served as a Prasad during auspicious occasions in Odisha.

- For the boondi
- 1 Cup Besan gram flour or
- 1/2 Cup water plus a little more
- 1/8 tsp baking soda
- For the Sugar Syrup
- 1 1/4 Cups sugar
- 1/2 Cup water
- 3 - 4 pods cardamom
- 3/4 Cup salted Sev fine or Shev, store bought
- 2 tbsps cashews raisins chopped and (optional)
- 2 tsps Ghee butter or Clarified
- Sift the gram flour and add the water to make a smooth paste out of it with a hand held whisk making sure there are no lumps.The consistency has to be thinner than the pakoda batter.
- Add the baking soda to it and whisk for 3-4 minutes and keep aside for 10 minutes .
- Heat the oil and position a perforated spoon over the oil and pour a ladleful of batter into the perforated spoon and spread it out.The boondis will fall drop by drop into the oil.
- Fry the Boondis on medium flame and take them out when they are still a little soft and not hard.Drain and keep aside.
- Now boil the water and sugar together with the cardamom pods for sugar syrup till the sugar melts and till the syrup thickens to one string consistency, it will take about 4 minutes.
- Once the syrup is done pour it on the Boondi, mix and let it soak for 1-2 minutes, then mash some amount of Boondi with the back of a ladle,so that the oil from the boondi seeps out and helps in binding the laddoos.
- Add 1 tsp of hot melted ghee , the dry fruits ( if you are adding )and the sev to the Boondi and mix well.
- Take small portions in the palm of your hand and form a tight ball.Repeat for the rest of the ladoo mix .
- Let it set for 2-3 hours...enjoy.
