Spicy Kidney beans and Cottage Cheese Burgers / Rajma Paneer Masala Burgers with Tandoori Mayo
Burgers remind me of my Moscow days, specially pregnancy days when I was expecting my younger one and couldn’t bear the sight of any food except the Russian Mac Donald burgers and the ubiquitous Borsch a Russian soup made with potatoes, beetroots,cabbage in a beef stock and served with a dollop of sour cream and dill. There was something about those heavenly burgers which made me salivate and dream about them 24×7 so much that after my return to India I am unable to relish a fastfood joint Burger.
Well making a burger at home is a darn easy thing now with all the ingredients readily available off the shelves including the frozen burger patties which are boringly either a chicken or beef one and a veggie one and full of hydrogenated fats and preservatives. Home made wheat buns, with a from the scratch patties and a home made dressing sure is a much more healthier treat.
I have always been smitten with fusion recipes which allow you to mix and match ingredients,cooking styles, recipes to come up with your own version. This fusion of Punjabi Rajma Paneer Masala patties with a tandoori Mayonnaise and American burger is sure going to tantalise your taste buds. This spicy burger goes as an entry for the 57 th Foodie Monday Bloghop for the theme Burgers.
This was our Sunday brunch and the girls relished it with a poached egg on their burgers. My mayo and burger buns were store bought as I was short of time but it can be made healthier by using whole wheat buns made at home and replacing a yogurt sauce instead of the Mayo. The Masala used for the burger patties was a traditional sautéed onion tomato chilli ginger garlic mixture with powdered spices which gave the spicy kick to the burgers and the Tandoori Mayo did wonders to the burger with its sumptuous flavour and a rich texture. I have not used Cheese but cheese slices are also an option. I have layered the burgers with torn Iceberg lettuce but romaine or green lettuce can also be used.

- Burger For the Patties
- 1 1/2 Cups Kidney Beans Rajma Boiled Or
- 3/4 Cup Cottage Cheese Paneer Crumbled or
- 1 onion Medium ,chopped
- 1 tomato Medium , Chopped
- 1 tsp ginger garlic paste
- 1 green chilli , chopped
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1/2 tsp red chilli powder
- 1 tsp garam masala Powder
- 1 tsp Amchur Mango powder Chaat Masala or dried or
- 4 tbsps bread bread dried crumbs or 2 slices fresh torn
- 1 tbsp Wheat Flour (only if the patties aren't binding well)
- 2 tbsps coriander Chopped fresh
- to taste salt
- mayonnaise For the
- 4 tbsps mayonnaise Plain
- 2 tbsps yogurt Thick
- 2 tsps masala Tandoori
- 6 Burger Buns
- 6 cheese Slices ( optional)
- 1 cucumber , sliced round
- 2 tomatoes , sliced round
- 1 onion small , sliced in rings
- 5 - 6 lettuce leaves , washed and dried
- 4 - 5 Tbsps Tomato Ketchup
- For the patties : mix everything together in a bowl mentioned under Patties keeping aside 2 tablespoons of dried bread crumbs.
- Mash everything together with a masher till it's mashed well, keep the mix aside for 3 -4 minutes so that the breadcrumbs soak the moisture from the mix.If the mix still feels a little moist and you can't form patties with it then add the wheat flour .
- Form the burger patties keeping in mind the size of your buns, dab the patties with the breadcrumbs you had kept aside, shallow fry them in a pan flipping them carefully. Drain and keep aside.
- For the Mayonnaise add the yogurt and the tandoori masala to the Mayo and mix well.
- Finally time to assemble the burger, halve the burger buns and toast or grill them a little and start with the tomato sauce , then lettuce, then the patty, then the Mayo, then comes the sliced tomatoes and cucumbers and finally the onion rings. If you are adding a poached egg that comes last and the cheese slice always comes on top of the patty Some prefer the lettuce down and some like it in the uppermost layer.
- My mantra is just throw in some veggies, patty, sauce or pickled veggies into a bun and dive into it ...Enjoy!!
