Steamed Caramel Bread Pudding
A simple, easy, steamed Caramel bread pudding with eggs, which can be prepared without an oven,in a pressure cooker or a steamer .
The last week just passed by in a haze with the kids’ exams, pick up and drop for the choir, drama, piano classes, a mid week Casino party, a high tea thrown at home and the rehearsals for the AGM. It’s that time of the year when the Navy wives welfare association (NWWA) has its Annual General Meeting and as committee members we have been working hard on our power point presentations to be presented on the D day.
The Foodie Monday Bloghop was the last thing on my mind with all these happening and I was going berserk going round and round trying to catch my own tail😅😅. And on top of that my hubby dear who was out flying in mid seas for the Malabar Exercise in the East Coast since the last one month decided to surface last Monday instead of the stipulated date. So at the last moment I excused myself from the Bloghop though my photos were ready but I wanted to spend some time with him and the kids together.
This Monday the theme being Steamed Recipes I decided to share with you all the very first Pudding recipe I learnt from my Mom in-law who is an Army wife and had taught me this super easy Bread Pudding which was very common in the armed forces circle during her days. This Caramel bread pudding is like a Caramel flan or a creamy Custard dessert, absolutely delicious with a melt in the mouth texture.
This simple dessert is made from stale bread, milk, sugar, eggs and vanilla extract, whisked together and steamed in a steamer or a pressure cooker with a caramel coat on top. How much simpler can this get..I ask you? We can call it Indian bread pudding and it is slightly different from the classic old fashioned English bread pudding . Garnish with some exotic fruits or nuts, serve it as a simple dessert for a dinner get together at home or a tea party, I assure you people are going to go ga ga over it. A small snacky dessert after school or play time for the kids and a lovely way to please them if you have lots of leftover bread sitting in the bread box. Enjoy the dainty, creamy, absolutely delicious, melt in the mouth, steamed caramel bread pudding.

A simple, easy, steamed Caramel bread pudding with eggs, which can be prepared without an oven,in a pressure cooker or a steamer .

- 4 Slices bread Brown or white
- 1 egg
- 500 ml milk
- 6 Tbsp sugar
- A Few drops vanilla extract
- Heat the milk in a pan till it's bubbling hot and switch off the flame.
- Add the sugar to the milk and mix leaving 1 tbsp aside for the caramelisation.
- Soak the bread slices in hot milk and let it cool for 15 to 20 minutes or till the mix cools completely.
- Now add the egg and the vanilla and whisk with a electric beater till everything gets incorporated well.
- In a 6 inch round baking tin take the rest of the sugar and start melting it on the stove top in medium flame.When the sugar turns golden brown and starts bubbling lift the pan with a pair of tongs and tilt it so that the Caramel coats the sides of the pan evenly. 1-2 tsp water can also be added to the sugar.
- Now pour the bread milk egg mixture into the baking pan, cover with aluminum foil,poke some holes in it for steam vents and steam it in a steamer or pressure cooker for 30- 35 minutes.
- For a pressure cooker add 2 cups of water, place a trivet, place the pudding pan on it making sure the base of the pan should not be submerged more than 1 inch. Close the lid tightly, remove the whistle weight and steam for 30 -35 minutes on low medium flame or till a toothpick inserted comes out clean.
- Cool and then refrigerate the pudding for 2 hours and then unmould it to get neat slices.
- I steamed it in my steamer which facilitates the boiling of water in the lower deck. You can steam in a big deep pan with a lid on if you don't have a pressure cooker.
- If you like more Caramel in the pudding add 2 tablespoons of sugar with 2 - 3 teaspoons of water and caramelise till golden brown.
- Dont caramelise on a high flame as the sugar gets burnt and will taste bitter.
- If you use sandwich sized slices of bread then add 1 cup more milk .
- Nutmeg and Cinnamon can also be used to impart flavour to the pudding.

Saswati after reading the recipe, I realised that I’ve tasted this pudding and it was made by my daughter’s friend’s mum. They were in the Air Force in Bangalore. I had become good friends with her and she used to make this often. Unfortunately she passed on a 4 years ago. Thanks for sharing the recipe. Next time I’m in Bangalore will make it for her girls.

I am the daughter of a retired air force officer from Pakistan. This method of making bread pudding is also a tradition in our country and officers mess. I have followed the steaming method all my life and my kids enjoy it.

Does the base of the dish have to submerged in water?? Upto one inch??
Classic, mild and delicious. Came out nice. Only thing is I let the caramel sugar coat to cool off completely before adding the egg mixture. The color on top came out perfect. Thank you 😊👍🏼
