Tuna Salad stuffed Tomatoes
Stuffing veggies is a sure way to turn them into comfort foods that everyone in the family is going to love, easy enough for everyday meals and attractive enough for your party menu.Its a nice way to incorporate veggies in your diet and involves a lot less work. And the possibilities of stuffings are limitless starting from veggies, lean meats, flavourful cheese, risotto,leftover rice etc.
Stuffing any vegetable is a simple thing but the technique varies from vegetables to vegetable. A very important thing to be kept in mind is to take the freshest and ripest vegetable available making sure it’s not too big and soft. Once the stuffing is stuffed into the hollows its is either baked or shallow fried and sometimes cooked in a gravy or a sauce to keep them moist and flavourful.
For the 59 th Foodie Monday Bloghop for the theme Stuffed Veggies I have prepared these Tuna salad stuffed tomatoes which is eaten as a salad and most simple,tasty, healthy and a filling recipe. The best part is it can be done ahead of time and refrigerated and served cold. Throw in all the salad ingredients together in a bowl, stuff the cored tomatoes with it and they are ready! This recipe needs no roasting and cooking as its a salad. Personally I don’t like the look of a roasted stuffed veggie as the skin shrinks due to heat and you have to compromise on the looks.

- 4 tomatoes Medium round
- 1/3 Cup tuna Canned chunks
- 1 onion small ,finely chopped
- 1/3 Cup bell peppers coloured ,finely chopped
- 5 - 6 black olives , Sliced
- A handful celery celery ,chopped or dried
- 2 spring onions witch greens (optional)
- 2 tbsps mayonnaise Low fat
- to taste Salt Pepper and
- Slice the top of the tomatoes and using a paring knife and spoon scoop out the pulp of the tomatoes as shown in the picture.Youcan use the insides of the tomato for any other recipe.
- Keep the scooped tomatoes upside down on a kitchen towel for the water to drain out.
- Drain the oil or the spring water from the tuna cans and mash the tuna chunks with a fork in a bowl.
- Mix the rest of the ingredients with the tuna and mix well. With the help of a spoon fill the hollows of the tomatoes with the tuna salad .
- Garnish with a mint leaf or keep back the sliced tops of the tomatoes and refrigerate the stuffed tomatoes covered and serve them cold.

I almost did a stuffed salad preparation but remembered that I wanted to try the spinach stuffed tomatoes. Love the photos and being a vegetarian will not comment on the filling.
