Watermelon Coconut Lime Sorbet
Well the summer is here and perfect time for some scoopable delights! Few things shout out the arrival of summer like the availability of watermelon in the local markets.Thankfully, Watermelon is one of those fruits that we all agree on. Refreshing and delicious,loaded with vitamins, minerals and nutrients which protects us from the heat of the scorching summer,watermelon is one fruit you should not miss during the hot season.
My younger one is an ardent fan of this juicy, healthy fruit and loves to bite into the big, sloppy slices of watermelon, her quintessential summer snack. Her favourite ways of eating it is in the form of sorbets, granitas or popsicles. With the school summer break on, she and her friends have picked up some serious wave boarding and during their play break they have been thriving on these icy juicy delights.
When you have a glut of of fresh summer fruit at home, sorbets are the answer. Light, sweet and easy to make, fruity sorbet is an interesting way to end a meal plus it’s a perfect summer treat! According to Wikipedia Sorbet is a frozen dessert made from sweetened water with flavouring (fruit juice or fruit purée, wine, liqueur or very rarely honey). As watermelon has very high content of water, I added light Coconut milk to it to add some creaminess, the lime juice gave the required tang and contrast to the sorbet. Instead of sugar I added honey to make it more healthy for the kids. Even with the coconut milk it freezes pretty hard, so it’s better to shift it to the fridge from the freezer 1 hour before to form easy slushy scoops.

Munch it fresh, slurp it in an ice cold juice, toss it through a savoury salad or just enjoy a juicy scoop of sorbet, beat the heat this summer with the versatile Watermelon 🍉 .
- 2 1/2 Cups watermelon Diced and deseeded
- 7 fl oz coconut milk Low fat
- 1 Small lime Juiced
- 1/4 Cup Honey or Sugar (optional)
- In a blender combine diced watermelon, coconut milk, lime juice and honey or sugar and blend till smooth.
- Pour the blended purée into a freezer proof dish, cover with cling wrap and freeze till nearly solid ( nearly 3 hours)
- Remove from freezer, cut the nearly frozen purée in small cubes, blend again in a food processor till the texture is silky smooth.Pour back into the freezer dish and freeze till firm for approximately 3 hours.
- Wait for 5 minutes for the frozen purée to soften a little before serving in scoops or in slush form.
Even with the coconut milk it freezes pretty hard, so it's better to shift it to the fridge from the freezer 1 hour before to form easy slushy scoops.
