Watermelon Kiwi Coconut Popsicles
It’s getting really hot here and every single day its a challenge to think of new ways to prepare something refreshing and cooling to beat the heat. As a kid I have memories of making mango iced lollies with mango juice in ice cube trays as mangoes are in abundance in every Indian household during the scorching summer. The late afternoons were mostly spent in sucking on those juicy yellow lollies, chatting with friends and this used to be my favourite summer activity. For me homemade Popsicles are what great summers are made of .
And as I searched frantically for a healthy summer treat for kids on the net, I came across this refreshing and colourful fruit based frozen treat on Pinterest which was sure to please the kids as well as adults. Just one look at the fruity, bright Popsicle and you would any day ditch the store brought ones.
If you are a sucker for sweet and fruity treats then there’s plenty to love about those DIY Watermelon, Kiwi, Coconut Popsicle. As for freezing the pops you don’t need a Popsicle tray or a special kit, a variety of kitchen items like a muffin tray, Dixie cups, parfait glasses or the ice cube trays will also do the trick. And as for keeping the Popsicle stick in place an easy peasy way is to cover the glasses or cups with a sheet of aluminium foil and poke the stick through for placement.

 Watermelon Kiwi Coconut Pospsicles...A healthy,fruity, colourful summer treat and a hit with the kids.

- 3 Cups watermelon ,deseeded and cubed
- 1/2 Cup coconut milk
- 1 Cup kiwi , Cubed
- 4 tbsps Cane Sugar sugar Organic or granulated
- 1 tbsp chocolate semisweet chips
- 1 tbsp lemon juice
- Blend the watermelon, lemon juice and 2 tbsp Sugar to a purxe9e and carefully fill 10 Popsicle moulds till 2/3 of the mould.
- Sprinkle the chocolate chips on the top and with the help of a Popsicle stick gently push them towards the side so that you can see them once they freeze.
- Cover the moulds with a sheet of aluminium foil, poke the sticks into each mould through the the foil so that the sticks stay in place.
- Let the watermelon purxe9e freeze for 3 hours so that when you pour the coconut milk it should not seep inside the watermelon layer.
- Mix 1 tbsp sugar with chilled coconut milk till dissolved and add 2 tbsp each on top of the watermelon layer.Chill for 30 minutes.
- Finally blend the deskinned and chopped kiwi with 1 tbsp Sugar till well purxe9ed,pass through a fine sieve to remove the seeds.Chill the purxe9e.
- Add 2 tbsp to each of the moulds on top of the coconut milk layer.Make sure the purxe9e is chilled before adding to the second layer otherwise if warm it will melt the subsequent layers.
- Chill for 1/2 an hour to 1 hour more. To remove the Popsicles from the moulds, dip the moulds in warm water for few seconds, then slowly pull them out.
